Changing Time Signature
I just recently started writing out a piece that is in the 6/8 time signature. After getting several pages in, I realized my ignorance in writing the piece in 6/8 time due to it being much more easily read if it were in 12/8 time. I thought I could solve the problem by simply changing the time signature to 12/8 at the beginning of the piece, but this only added twice the amount of beats to every single measure (in this case it being in the form of a dotted half rest being added). My question is, is there any way I can just double the note value of everything I have written so far? For example, make every semiquaver into a quaver, or make every dotted quaver into a dotted quarter. I would great appreciate any advice, as I do not wish to have to rewrite everything I have so far...

Normally, you wouldn't want to double everything in 6/8 to turn it into 12/8 - that wouldn't make musical sense. You'd simply want to combine measures in pairs. You can do this by selecting the original, cut, then change the time signature, then paste.

I was thinking of changing it to 12/8 and then speeding up the tempo so that there are no changes in the meter, just the appearance of the notes on the page. Your suggestion works as well though, thank you!
