This doesn't tell me how to make the text look like the traditional tempo/articulation font. I want the word to look like it does in printed music scores.

Select the text;
Use the dropdown list in 'Inspector' (F8)

Or just create it as tempo text rather than staff text - see the Handbook under Tempo.
