Changing both the time and key signatures
I have changed both the time and key signatures in the music. I changed from 4/4 to 2/4 and from E♭ major to B♭ major.
The time signature is fine but the key signature has the A♮ ahead of the B♭.
How do I get it to read like it should - B,E then A?

So this is fixed for version 2 when it finally arrives I think, although it might be as well to download a nightly build to check.
If you just want a workaround, right click the key signature and select "Hide naturals" then drag one from the master palette (press Z) into the appropriate place.

I tried to hide and then move the natural to the key signature. That did not work. It did nothing. Then I selected the natural clicked on the key signature hand depressed Z as suggested. That brought up a Symbols map.
I will just write in the ♮.

From the symbols map simply select the natural and drag it into position. No need to write anything in.
But also, you may wish to reconsider whether any of this is necessary. If the discussion in the issue report shows anything, it is that both methods are common in the real world. An examination of the scores on my shelf shows this to be spot on - it's about as close to 50/50 as I could imagine. So there really isn't much reason to go through enormous handstands just to get one look when the other is just as clear and just as common. When it becomes easier to change between them, sure, go with what you want. But why mess up your score with symbols unnecessarily? That will just make it harder to adapt the score to 2.0 later, and will produce more confusing MusicXML export, for really no benefit.
