If I download a soundfont that only has guitars on it, and I select it on musescore, then I would only have guitar sounds, right? I thought I could add but it looks like it's one or the other. :(
1.3 and 2.0 use FluidSynth
(synthesiser), but I was referring to FluidR3_GM (soundfont). See this list
. Not listed though is the aforementioned fluid.sf3 to be included in 2.0 - a new format (sf3 uses compressed samples, compared to sf2) based on the existing FluidR3_GM soundfont. You can read more here

2.0 is most likely coming this year, but there's no date - many things still need fixing by the developers :).

What to do is, go to 'Display'>'Mixer' and depending on the soundfont, you can select the sound you want.
1.3 includes TimGM6mb.sf2, but 2.0 will likely use fluid.sf3.
