If you right click on an empty part of a measure (to place a blue box around it), a popup menu will have 'Staff Properties' as one of the choices.
You can change instrument names there, for example.

I made a mistake or I should say the software made one. When I tried to explode the piano part using arrange parts it only succeeded in doing five measures. The piano part remained intact but the woodwind quintet parts were all rests. What am I doing wrong?

Impossible to say unless you post the score you are working with and describe exactly, step by step, what you are doing, what you expect to see, and what happens instead.
