Knowing Where Buttons Are

I'm composing my first symphony, but to save time I would like to write all of the parts in their concert pitch, so could anyone tell me where that button is? I've only written for string orchestras before. Also on the topic of generally finding stuff, in a couple of my pieces, I was trying to find a ritardando and a fermata, so could someone also tell me where those are too? And in the recording musescore plays back, is there any way it could play the crescendos? Because sometimes I feel like the recording sounds a bit too sudden and I would like a crescendo. Thanks!

The Concert Pitch button—located to the top right of the toolbar area (between the metronome and camera icons).
Fermata is found in the Articulations and Ornaments palette.
Crescendo (hairpin) is in the Lines palette. See:
