Custom tablature font
Is there currently a way to change the font for tablature numbers to any font I have installed on my system? Or are we restricted to the ones in the drop down menu (MuseScore Tab Sans/Serif)?
Similarly, is there any way to make the numbers bold?

For "contemporary" tabs, indeed. Other fonts are available for early music.

Not currently. See the related feature request: #268399: Tab: make font bold, italic or/and underlined

Okay, thanks.
Is it not possible to just replace the font file within the MuseScore directory(s) with a font of my choosing, and rename it?

AFAIK, I do not think so.
What do you want to achieve (an image?) Instead of a bold font, you can change/increase the size (as mentioned in the feature request), in Advanced style properties.

Just something a bit easier on the eye. It's a personal preference, I'm just not a fan of the in-built fonts. In other software I use a custom tab font that I've just gotten very used to and I like the clarity of it.

Maybe you think of GP (or another program) that allows this, ie custom fret numbers (Texts & Styles), in Style Sheet (F7). I understand. We would like to find the best (some facilities / features) and keep our habits exactly by switching from one sofware to another! :) I fear some choices by design are inevitable (I am not talk about the custom fret numbers specifically)

Yep, you've pretty much hit the nail on the head :)
