turning 3 staffs into 2 staffs
I have noticed this score of 'The Firebird' has sections where 3 staffs turn back into two. every time I try to do this for my scores it adds a 3rd staff, but it does so to ALL measures when I only want a specific section to have three staffs. I want to be able to add a 3rd staff to let's say 4 measures and on the 5th measure, go back to two staffs.

You can do this, it's just a little tricky in version 2. Add all the notes to all of the staves including the extra staff, then use Style->General... and check "Hide Empty staves." and uncheck "Don't hide empty staves on first system."
In version 3 this is much easier. Right click the staff, select staff/part properties and check Cutaway and only measures on that staff with notes will be visible.
