Look under Format-->Style-->Text styles (way down at the bottom): they can then be saved with a style file for future scores.
Or, they can be altered locally with F8 properties.
MuseScore has a plethora of fine text fonts available, but if none of those suit your fancy, you can import others to the program (I'm rather fond of Cardo)--but they won't be displayed correctly if you share score files with others.
