Try Edit / Preferences / Appearance. Look at the sections for Background and for Paper. I think you want the former. Confusing, having it right next to a section labeled explicitly "Canvas", innit? :-(

Yes it is confusing. Why not have everything in one pop up window that takes care for the colors of everything.
