Weird key change
Okay, I'll be the first to admit that I may be a little over my head working with a full orchestral score. Initially, everything is as it should be. Key is concert G major. Flutes, oboes, violins, etc. have one sharp. Clarinet and Trumpet in three sharps. All expected.
At the eighth measure, suddenly, there appeared a double bar, and a kind of key change. All instruments are in their original keys except the oboes. They are now in the key of C; the sharp has become a natural.
Is it something I inadvertently did? If so, what did I do and how do I undo it? Or is it just some funky glitch I can ignore?

In the oboe part, select the natural sign at the end of measure 8. Select the single sharp from the Key Signature palette.

Perfect. It worked. Thank you. Still don't know why that happened, but if it happens again, I'll know how to fix it.

Also, I work in concert pitch. That saves having to think in different keys for various instruments all the time. You do have to be aware of ranges, however.

It's a "feature" of MuseScore that if you select only a single note instead of a full measure before clicking the desired key signature in the palette, it only applies to that staff. This was intended as a way to allow mid-measure key changes. But it's definitely led to people accidentally getting one staff in a different key than others. Perhaps somehow this happened. Also, Ctrl+clicking a key signature will also apply it to just a single staff, but that's not something you're likely to do by accident.
