Staff text font size/type
I'm finding some forum posts that older versions may have had the option to change Staff Text font size, but I can't find it in Styles - Staff Text, or by Right-click on the text itself to edit. Would also like a different font. Was this a feature that was removed at some point? Using version 4.

You can set the size in: Style->Textstyles->Staff text
Or use the Properties panel.

Yes, easily found that but there’s nothing that changes the size out type of font there

Are you sure? For MuseScore 4 try:
To set overall style for the score
Menu path: Format > Style... > Text Styles > Staff > Edit Text Style > Font + Size + Style
To change a single staff text
Select a staff text > Properties panel > Text > Font + Style + Size
