Removing Samples from Existing Banks
I want to know if it's possible to create an entirely new soundfont from other instruments from their respective banks. If possible, I'd also like to know how.

You mean you are not finding the documentation for how to use that program on their own web site? That sounds like a good issue to bring up with the makers of that program, but there really isn't much that can be done here about that.
