How do I translate ONLY THE INSTRUMENT NAMES in my score to ITALIAN without having to go to stave properties and that lengthy journey?
Can I set this by default?

Do it for one score and save that to your Templates folder. That's assuming it's literally the same type of ensemble you are writing for. If you write for lots of different ensembles but want the instruments in Italian, you might be able to specify a custom isntruments.xml in Edit / Preferences / Score. Of course, you could also just change language of the program to Italian, that would get your there quickly also. Edit / Preferences for that.
