How can I get key of C. No sharps/no flats. I choose key of C, but I always get F# and C#.

Musescore will display the instruments in their transposing key. You can do two things:
1. Turn on "Concert Pitch" and the key sigs will change to what they are playing.
2. You're likely selecting a Bb instrument (sax?). If a Bb instrument in the key of C is scored in D (2 sharps) then try selecting the key of Bb (2 flats) when you start a score. (Confirmed, soprano sax, select key of Bb and the display key comes up in C).
