Is it possible to actually add styles like Legato, Marcato, or Staccato to a piece and have it play the style in playback?

Not legato, though—that's basically the absence of any marking to the contrary. But yes for marcato and staccato.

but I old friends on this and the last part doesn't sound staccato enough but there aren't supposed to be staccato markings there.

I didn't quite understand that, but feel free to post the score you are having trouble with so we can see what you mean,
In general, playback is there to give you a rough idea of how things might sound. If you need to exercise further control over the exact length of a staccato note, you can right click a measure and use the pianoroll editor, but it's a lof of work and not reallyh the main point of MuseScore.
