Beam Properties
So I know that I can go to the beam properties to un-connect the notes, but I don't know how to do that for sixteenth notes. I have a piece I'm transposing, and it's 6/8 time but the sixteenth notes keep connecting to each other. Does anyone know how to separate them?

Select all the notes (or the entire measure) and click on the first symbol in the palette

I don't mean to make all the notes individual. But to group the sixteenth notes in 4 groups each

Beam Properties works exactly the same for sixteenths as for eighths.
But in 6/8, you shouldn't need to override the defaults. Beaming six sixteenths togehter is pretty standard; you would need a very special reaosn to deviate from this standard - people are very accustomed to reading sixteenths this way, and doing it differently would make it harder to read because the rhythms would not look familiar.

Ah. In that case, instead of breaking beams manually, considewr changing the defaults - see the Handbook under "Time signature" to see how to do that.
