There's not really much point in a template for a single instrument.
If you create a score for a single viola, it automatically gets alto clef already. Scores for unaccompanied solo viola are very rare so it doens't make sense for us to add templates for that. But if you personally write a lot of solo viola music, you could indeed save yoursellf the couple extra clicks it takes to select viola from the instrument list by creating your own template for your own use. Just set up a score as you like and then save it to your Templates folder. Next time you start MuseScore, it will be available for use.
