Can I change tempo halfway through a score so it will play back that way in a WAV file?

I did read this before I asked the question. I double clicked to edit-and I know where the tempo indicator is.
It says to hit 'OK' when the tempo is set. Where does it say OK?

If you want to change the text of the tempo, double click on it and change the text. If you want to change the value of the tempo, the BMP, right click on it -> Tempo properties and change the tempo there.

Perhaps I am stupid-but I don't know what I am doing wrong.
I double click the note where I want a specified tempo. Then I open up the tempo window showing bpm.
I set it where I want, but how do I save it? The manual says to hit 'OK'-but I see no place to do that.
Now, the tempo I set is fine, and it plays at that tempo. Next, later on in the score, I do the same procedure on the note where I want the tempo to slow down. But the new tempo affects the entire piece from the beginning.
What am I doing wrong?
My goal is to be able to create this score in a WAV file, and when it plays back, it will reflect the different tempos, i.e. beginning at 120 bpm, and later on slowing to 80 bpm.
