Formatting existing text
I'm trying to change the format of text (written with "Cntrl T) which I've already typed.
I've already tried "text editing" which doesn't seem to affect existing text. Is there a way to do this?

Yes...
Right click the text you want to change and choose "Text Properties"
This doesn't work for all text elements.
For some you will have to double click the text you want to change, use CTRL+A to select the text element and then use the Text Formatting controls at the bottom of the MuseScore window to change formattting.
