F11 shows sometimes play panel, sometimes mixer
I expect the play panel and I don't understand why sometimes I receive the mixer instead of play panel

I sound like you have F11 assigned to both in the preferences. The default for the mixer is F10. Shortcuts are under edit->preferences then the shorcuts tab.
