Can I use my own soundfonts on a keyboard
If I found a better GM soundfont can I hack the system of a keyboard and swap the soundfonts? Or even use a non GM soundfont? That would be great!

If you mean a MIDI keyboard and you want to play live with it, you can always load the soundfont in a synthesizer and connect your keyboard to it. There are many synthesizers, standalone or vst that can load SF2 or SFZ files (http://www.synthfont.com/ Sforzando https://www.plogue.com/downloads/ FluidSynth http://www.fluidsynth.org/)
