In 6/8 measures, how do I get a single beam over all six eigths as a standard?
As a standard, beaming happens automatically in MS. In a 6/8 measure this yields "1-2-3 4-5-6" beaming or, in other contexts, "1-2 3-4 5-6" beaming. I would need a default setting to beam all six notes in a 6/8 measure score so that all six eights are always beamed together, as a standard.

How can I achieve this beaming in MS without having to mark and click every single measure using the palette's beaming symbols? Can I set the beaming as a default per score or something?

For an entire score, the better is to create a specific time signature (or as mentioned below, edit the current one)
So: Shift + T -> create a 6/8 time signature, and tick the fourth note in the "Note group" to receive the result as image below:
Then: click on "Add" buttton -> and in last, from the middle column, drag and drop this "new" 6/8 into the score. So, all the beaming will organized with this display.
Either create a new 6/8 time signature (See: https://musescore.org/en/handbook/time-signatures#create-your-own-time-…)
Or edit the existing time signature (Right click the time signature and select Time Signature Properties. You will see the same window as create you own time signature, but it will only affect the selected time signature rather than create a new one.)
