Is it possible to enter a score without a time signature?
I have a piece of music that I'd like to transpose that was written without a time signature. The piece is "I Lift Up My Eyes to the Hills by Kenneth Jennings. (The quarter note remains constant throughout and the measures are, of many different, changing lengths.) Is it possible to do something like this in MuseScore? I'm guessing that I may have to enter different time signatures, but I'd be happy if I didn't have to do that.

Try the Edit-> Bar-> Split/Join feature.

You will have to enter a time signature for each measure that is a different length than the previous measure. But of course, as you said, ametrical music does not show time signatures, as having so many different time signatures would clutter the page. So what you can do is after you have entered the time signatures and notated the music, right click on each time signature and click on "Time Signature Properties" in the drop-down menu. In the dialogue box, choose "Text" under "Appearance" and delete the contents of the two fields beside that radio button. Click "OK", and the time signature will disappear, but the measure will maintain the length you have given it.

This is not true. you can right click a measure to change the actual duration of the measure in the Measure Properties. For ease of management in MuseScore, I would suggest you use as few Join measures as necessary to allow for the rhythms, then change the measure duration as needed to lengthen or shorten the measure, usually by a fraction of a beat. Finally I would make all of the bar lines invisible to give the appearance of untimed measures.
