By play panel setting is not saved in the score, to save in the score you must use a tempo marking.
on the top left corner of your sheet music, you will see a quarter note = a number. (beats per minute)
Right click that number and select "edit element".
You'll be able to type in the new desired tempo number by changing the number of beats per minute. :)
