How do I increase the size of the note heads? I need bigger notes so that my older adult students can easily read the score.

Indeed, you almost certainly don't want to just increase the notehead size, but rather you want to scale the entire score, and the setting mentioned above does that. So the staff size and everything else gets bigger in proportion. Otherwise - if the notehead got bigger but nothing else - the score would become harder to read, because now notes that should sit in the spaces between lines would start overlapping the lines.
I would suggest increasing everything -- the staff and measures, included. Increasing the notehead ratio to the staff will make them overlap the lines; they already blend until it seems the exterior of the notehead reaches the far side of the line.
