I.e. do you mean only one staff's notes where the instrument is "voice" or only one voice in a staff with more than one musical voice / contrapuntal line in one staff?
Select the contents of the staff, use View / Selection Filter to exclude the voice you want to hear from the selection, use the Inspector to uncheck the Play property of the remaining voice(s). In MuseScore 3.0, it will be possible to mute/solo individual voices directly from the Mixer.
