The last note is highlighted rather than the rest that was created when you undid.
You should be able to enter a couple of note, press undo once (probably because you entered the wrong note) then continue in the position of where the note that was undone rather than pressing the right arrow to move the note input cursor to the location of where you want to resume entering notes.

I agree. I don't remember it doing this before. I know it didn't happen in version 2, so its a regression.

Yes, I accidentally made MuseScore modify also input state on restoring a single selection. For the correction to this see https://github.com/musescore/MuseScore/pull/4306.
