How do I add a new verse of lyrics in between two other verses
I want to insert verse 3 between 2 and 4; insert verse 5 between 4 and 6; and insert 7 at the end of the stack

Since you are using version 3, you can right click a lyric in verse 4 and then choose Select>More... check "Same subtype" and click OK. In the inspector the Verse is identified as 4, you can change this to 7. You can then repeat the process for the other verses so they end up in the correct verse.
Once this is done, select the the note where you want to start and use the up and down arrows to move the cursor to the correct verse and enter lyrics as normal from there.
