In case it's not obvious from the link provided. You can have one voice using one style while another voice is using a different style. Click all of the affected voices for the style and change the style, then in the next line click the voices for another style and change it to that style. Since there are 4 voices, you can have up to 4 styles at once if he instrument supports it (default strings max out at 3).

I meant changing the actual voice in the mixer. The new mixer is kinda weird tho.

Ah. lick the arrow in the top left of the instrument box to see all sounds on that staff. You can then change the other sounds.
