Is the arpeggio over more than one staff doable?
i was wondering if i could do something like this (see image inserted).

Add it to one staff, disable automatic placement for it by pressing "=" or using the Inspector, then double-click it and drag it to the other staff. It won't play back as such but will look fine.
At that point you should just consider writing it out.
As Marc suggested, you need to disable auto placement on the arpeggio line.
Here's what I do.
Put the notes in voice 1 without the arpeggio line
Select all the notes and uncheck play for them in the inpsector
Enter all of the notes for the arpeggio on one of the staves (which ever has the most notes is what I do) in voice 2 (or another unused voice)
Make these notes invisible (select them and press V)
Make sure you can see invisible notes (menu View->Show invisible)
Add the arpeggio line to the invisible notes (so it is not invisible)
Select the arpeggio line and disable auto place, double click the line and adjust it's height to cover both staves.
Having 2 arpeggio lines sometimes causes problems so I only use the one that's needed and move it left or right in the inspector if it's still on top of an accidental.
It's possible to use implode, copy and paste to create the voice 2 notes but it's more complicated in version 3, so I'll only explain that if you need and want it.
