Bars
How do you create a new line for a new section of the tune? I know how to add more bars, but how do you fix the bars to a new line rather than carrying on from the last bar of the previous section?

The the breaks and spacers palette there are 3 types of breaks.
System break, starts the next measure (bar) on a new line of music. The next measure will be on a new line and it will affect every instrument the same regardless if there is 1 or 100. You can toggle these by selecting a measure and press return.
Page break, starts the next measure (all instruments) on a new page. You can toggle these by selecting a measure and pressing ctrl+return.
Section break. starts a new section. By default, there is a 3 second pause, measure numbering restarts at 1 and the long instrument names are used on the first system. You can right click the System break, choose Break properties and change all of these default behaviors. It also acts as a system break, though you can apply a page break on the same measure if you want to.
