I'm trying to compose, and sometimes it works fine. However, there are other times where the app just won't let me enter new notes which makes me have to restart the app and open up my score again. It's really frustrating.

The app sometimes won't let me enter new notes, which makes me have to save what I'm doing, reload the app and open my score back up. It's really getting frustrating.
I suggest that next time you can't enter notes take a screen shot and attach it here.
In windows, you can press ctrl+print screen then use ctrl+v to paste it into windows paint, save the file as PNG file and attach it to your next post. Other operating systems should have similar options.
If your mouse accidentally double-clicks *1 the software may be switching to edit mode.
When this happens, try pressing the "esc" key on your keyboard.
If this solves your problem, you may want to consider buying a new mouse. (and report here)
*1 this usually happens when the mouse gets too old, for example after a year or two of heavy-use
A screenshot would tell us there is a problem with the mouse as well as a couple of other things that leads to this problem.
