How do I delete the rest from staff cause I can add notes but the rest will not leave my staff and It is messing up my arrangements.

Chances are that you are not entering notes into voice 1 for that staff. Rests for voice 1 can only be made invisible, rests in other voices can be deleted by selecting them and pressing the Delete key on your keyboard.

I agree that is probably the answer: you are probably entering notes into the wrong voice. It's also possibly you have used Insert mode rather than the usual note input mode, which would also result in rests you don't want, so the solution is, don't use insert mode without good reason. But if that doesn't solve your problem, please attach your score and describe which rests you don't want.
