Multiple instruments <-> instrument change

Hi all,

I'm aware that Musescore now offers the option of changing the instrument associated to a staff any number of times. I'm currently transcribing a number of pieces for the keyboard where instruments need to change a lot (Transatlantic, Neal Morse, ...), and I'm debating whether I should use that option (which yields a much more readable score if you want to learn to play the song) as opposed to using one staff per instrument in case people who use it want to assign parts differently.

So here's one question whose answer that might help me make up my mind: is there an easy way to split a single-staff, multi-instrument score into a multiple staves? (and conversely, is it easily possible to merge multiple staves into a single multi-instrument staff?)
