For multi-colored notes (depending on pitch), see:

To color all notes the same ... select all the noteheads (Select -> All Similar Elements) and use the Inspector to change from black to whatever color you want.

cannot find "all similar elements" in (musescore 3).

You need to right click (aka Ctrl+click, or two-finger tap, if no two-button mouse). Then the popup with the Select menu will appear.
