How do i reset the sounds of each instrument?
I used a soundfont, and was disappointed because crescendos and diminuendos over one note doesn't work (by the way, if anyone knows how to fix that, please let me know), but when I try to change it back to the original soundfont, everything is messed up. The trombones are playing flute sounds, the piano is a timpani, it's a disaster.
Is there any way to just reset it, or will I have to do it by hand?

It's true that many third party soundfonts won't support single note dynamics. Some might work if you go to View / Synthesizer / Dynamics and try other settings, there, but unless the soundfont specifically advertises it supports this, chances are decent that it does not.
I'm guessing the soundfont you tried was not General MIDI compatible, and when you installed it, you went to the Mixer and changed each instrument's sound manually to whatever the equivalent was in your non-standard soundfont. You'll have to reverse that process if you want to go back to a standard soundfont. Well, I guess you could go to Staff/Part Properties, and use Change Instrument to change the instrument back to itself (!) which should reset the sound too, but that wouldn't be faster.
