How do I make spiked pedals(apply pedal and release immediately)?

See the section of the Handbook on Lines. You want the ones that have half-angle brackets. So add the one that looks like |____/" to one range of notes, then the mirror image of that to the next, etc. If you do it right - end note of one range is start of next - everything lines up perfectly automatically.
