Chord Symbols: So uh, ♭ VI and ♭ VII keeps turning into _BVI_ and _BVII_

If I try to manually and very explicitly put in a flat sign, it helpfully turns it back to "b" as if that was my intention.
Current workaround is using "Staff Text" and manually formatting it myself.

Looks like you are tryng to use the chord symbol facility to enter what is actually Roman numeral analysis. That won't work, B is correctly seen as a chord name. Instea,d use the actual Roman numeral analysis feature (see Add / Text / Roman numeral analysis, or define a keyboard shortcut in Edit / Preferences / Shortcuts).
