I'd like to have one file with a standard treble-bass pair of piano staves, plus a few other staves for other voices, plus also a single staff with just lead sheet style melody plus chord symbols, the be able to choose to either view and print the whole thing, or hide everything but the lead-sheet staff and view/print that alone.
of course I could develop the whole thing, then "save as" to a new file name and delete everything except the lead sheet staff in the second file. But ideally, I'd like to be able to go back and forth between these two views while iteratively developing the piece. Is there any command, setting or workflow that can do this?

Yes, but not the way you describe it.
You want "Parts"

You keep your "complete" score, and you do not need to hide anything. Instead you generate "Parts" for the individual staffs.

Still at the early phase of the MuseScore learning curve, but the extent that I understand the manual on Parts, this looks like it can do what I want.
