A more specific mid-staff instrument change where the voice of the instrument can be selected
I've been trying to change the sound of a drum kit to an electronic-sounding kit and back to an acoustic one, and I've been changing the sound of a keyboard from strings to piano and back, but I'm stuck with the default voice every time I do it. I'd like to use the same voices I was using before, but I cannot find an option to adjust that. I could've sworn it was possible in a previous version, where every new instrument change created a new slot in the Mixer.
It's possible that MuseScore 3 has the capability, but I've looked through all the documentation about mid-staff instrument or sound changes, and trying those methods doesn't create this option. Am I just missing something that exists, should they add this in, or is it trivial?

When you use "change instrument" a new instrument definition is loaded into the score at that point in time; so if you had customized your drumset, and you wish to continue with that custom definition, you'll indeed have to reload the drumset definition for it.

I didn't mean those kinds of voices. I was talking about the virtual instruments used. For example, I really like "Synth Strings 3," but when I switch to piano and back, it comes back as the default for that instrument, "Synth Strings 1." I have no way to correct it because it doesn't show up as a different instrument in the Mixer.

The "Change Instrument" text does create a new track in the mixer. You've likely overlooked that because you haven't expanded the original instrument track yet (click the arrow on the top-left of the track to expand it).
