Left and right brackets
L.S. Perhaps somebody can help me with the following.
I'm trying to add brackets to my organ score, indicating that both staves have to be played with both hands on 1 manual. The symbols looks like an opening and closing square bracket.
The left bracket is available in the Arpeggio Palette, the right one in red does not seem to exist.
Am I right or is there a hidden symbol for this?

Use the Arpeggio bracket from the corresponding palette and disable it's playback in Inspector

That is what I have written in my question:

Is there another, similar but exactly apposite, symbol that I am unaware of?

As far as I can see not.
Workarounds:
1. The arpeggio has a nice 'hooked line', with only hooks to the right, not to the left.
There was an idea to make it possible to make it (and other elements from the palettes) rotatable. GThat has not yet been realized.
2. There is also a 'note anchored line'. That has hooks. The hooks are not perpendicular to the line (90 degrees) but are always oriented vertically.
So, no solution other than a (fat) right square bracket. (as far as I can see)

has been closed as a duplicate if #300462: Add square brackets to score elements to indicate editorial additions/changes
But that issue tracker has been discontinued, so you'd need to request it on GitHub
