chant skipping rhythm maybe summer canon
I was listening to some monk chant and the song was from ancient scripts but the singing was like skipping. Do we have anything that might replicate this rhythm, maybe it's a lot of staccato?
da-da-da-da da-da-da. It really sounds like round and round the garden, the monkey chased the weasel.

If you read the wiki article I linked to it describes how they did it - it's clever stuff, but quite common for those days.

Or if you are asking how to write a tune with a "skippy rhythm" here is such tune of not much musical merit but demonstrating how skippiness might be notated.
