Is Musescore programable
I'm still learning. Looking at the Mixer, is it possible to change the settings (volume e.g.), during the progress of a work? Or change a string from violin to pizzacato, and back? I'm not keen on having to do it manually.

There’s plugins. But they are limited to what the API provides

You shouldn't need to be using the Mixer to change volume mid-score - that's what dynamic markings are for (see Dynamics palette). Similarly, to change from arco to pizz, simply add the appropriate marking (see Text palette).
As Marc has said above, the "pizz." and "arco" text markings should cause this change in playing style to happen automatically. You can still use the Mixer to select which soundfonts are used for different playing styles, but the defaults should be fine.
