Is it possible to create a score without a Time Signature (because it's sort of 'free-time', i.e. different bars have different values? Thank you.

Yesn't.
You can't create a score without a Time Signature; but you can disable the display of the time signature in staff/part-properties as well as create custom length measures. For example via split/join of measures and/or with Tools > Remove Selected Range and/or insert mode.
