Adding pickup rest
I want to add an eighth note pickup rest at the beginning of the piece, then have the last bar have the corresponding beat subtracted. I hope I am describing this clearly. Can anyone help?

Right click in the first bar and select Bar properties (or Measure properties for US localisation). Adjust the actual length to be 1/8. You can do a similar thing in the final bar.

I got the pickup bar, now I need to adjust the last bar so it reflects the subtracted eighth rest. Do I do something similar for the last bar?

Yes, just make the actual duration the correct number of 1/8ths - e.g. if you are working in 4/4 and your pickup is 1/8. the final bar should be 7/8. It is rather an old convention. Some publishers now don't bother with shortening a final bar.
