No quantitative method to customize dynamic expressions like Forte or Crescendo

We were able to, say, appoint the "forte" as a velocity of 100, and let a crescendo have a 30-velocity-rise effect, or even choose the increasing speed of the adding velocity in version 3.6.2 - which cannot be found anywhere now.
We DO need this function.
