how can I change title font in musescore 4.x (no problem in 3.x)?
I tried format --> style --> text styles and changed edwin to arial but it doesn't stay. I can only click OK and the apply is gray

I probably didn't understand you
after selecting the title where do I find the properties panel (right click doesn't show properties)?
thank you

at last! found the properties panel, change font and it worked
but I don't have OK or Apply. I used enter key like you suggested
How could I make arial font my default for every text?
thank you!

That's what Style files are intended for. See the menu options:
Format >Load style...
Format > Save style...
Where these Style files are saved to and loaded from is defined in Edit > Preferences > General > Folders > Styles. It's probably better not to change that default location.
The Handbook explains about using Style files:
https://musescore.org/en/handbook/3/layout-and-formatting#save-and-load…
There will be quite a lot of preparatory work, because you need to create a empty score with all your font requirements manually set in:
Format >Style... > Text Styles > Title
Format >Style... > Text Styles > Subtitle
Format >Style... > Text Styles > Composer
Format >Style... > Text Styles > Lyricist
Format >Style... > Text Styles > and any other Text Styles that matter to you...
Then you can save the style settings with Format > Save style. And that .mss style file is what you use to apply the same font settings to any future score with Format > Load style.
You can even add the .mss file as an automatic style for all future scores in this way:
Edit > Preferences > Score > Default files > Style > add your .mss file here

thank you very much
it really helped
can style.mss be incorporated with mytemplate? or if I added mystyle.mss to format --> style I don't need to do it?

I already explained how it works:
"You can even add the .mss file as an automatic style for all future scores in this way:
Edit > Preferences > Score > Default files > Style > add your .mss file here"
So:
- the Style sheet will be automatically applied to all new scores
- existing scores/templates which you created before the Style file was generated must be individually updated once only using Format > Style... > Load style - and then remember to Save the score/template
