Different kinds of fermatas are in the Breaths & pauses palette. Click the note, rest, or barline that you want the fermata to be over/under and then click the appropriate button in the palette.
FYI: that's how you'll add most items from the palette. Some of them attach to a note (for example, staccato, tenuto, and staff text), some to discrete whole measures (for example, Da Capo, Segno, and voltas), some to sequences of notes that may or may not coincide with whole measures (for example, slurs, cresc., and rit.).
