After adding "rit" to the score from the tempo palette i cannot see how to alter the font size / bold / italic. These properties can be changed for other items from the tempo palette such as "andante"

You're right that you can't change font properties for a rit. in the usual Properties panel. This does seem to be a missing feature (but not an actual bug).
However you can specify global font property changes to rit. , accel. and other "gradual tempo change" elements with this menu path:
Format > Style... > Text styles > Gradual tempo change
